I keep the momentum going with a healthy, energizing salad at lunch. This is an example of one that makes you feel fantastic inside and out. Filled to the brim with veggies and packed with protein, this salad will power you through the rest of a productive afternoon.

SERVES 2

½ cup chickpeas

1 tablespoon extra-virgin olive oil

1 teaspoon chili powder

½ teaspoon ground cumin

2 carrots, spiralized into spaghetti noodles

1 beet, spiralized into spaghetti noodles

1 broccoli stem, spiralized into spaghetti noodles

¼ cup chopped fresh basil

2 tablespoons Orange-Basil Vinaigrette (here)
