Spiced Beef Brisket

Preparation time: 20 minutes

Cooking time: 32 hours

Servings: 4

Ingredients:

- 2lb. beef brisket

- Salt and pepper, to taste

- 2 tablespoons olive oil

- ½ tablespoon tomato paste

- 4 cloves garlic, minced

- 1 tablespoon smoked paprika

- ½ tablespoon beef demi-glace

- 1 teaspoon chopped thyme

- 1 cup beef stock

- ½ cup red wine

- 2 tablespoons honey

- ¾ lb. carrots, peeled, cut into matchsticks

Directions:

Preheat your Sous Vide cooker to 155F.

Season the brisket with salt and pepper.

Place the brisket into Sous Vide cooking bag. Place aside.

Heat ½ tablespoon olive oil in a saucepan.

Add tomato paste, garlic, smoked paprika, demi-glace, thyme, stock, and wine.

Simmer 5 minutes. Stir in the honey and season to taste. Simmer 1 minute.

Pour the mixture into the bag with beef and vacuum seal the bag.

Carefully place the bag into the cooker and cook 32 hours.
