In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed for about 5 minutes, until light and fluffy. Add the palm sugar one-half at a time, letting it fully incorporate before adding more. Continue beating until light and fluffy. (The palm sugar won’t fully dissolve at this point the way white sugar would.) Add the egg and vanilla and mix until incorporated.

While the butter and sugar are creaming, whisk the flour blend, baking powder, xanthan gum, and kosher salt together in a medium bowl until uniform. Add the dry ingredients to the butter mixture in one addition and mix until just incorporated. Add the carob chips and walnuts, if using, in one addition and mix just enough to evenly distribute them through the dough.
