PEANUT-GINGER TURKEY LETTUCE WRAPS

SERVES 4 | PREP TIME: 15 MINUTES | COOK TIME: 15 MINUTES

30-MINUTE | DAIRY-FREE

These lettuce wraps are fantastic for your friends who are on low-carb diets or anyone looking for an out-of-the-box ground turkey recipe. I like to use Boston Bibb lettuce or romaine hearts, but any leafy green will do.

¼ cup lower-sodium soy sauce

1 tablespoon sugar

2 teaspoons sesame oil

1 teaspoon peanut sauce

1 pound ground turkey

2 teaspoons minced peeled fresh ginger

1 garlic clove, minced

1 cup canned water chestnuts, drained and chopped

½ red bell pepper, seeded and chopped

¼ cup shredded carrot

2 cups cooked rice

8 large lettuce leaves

1 . In a small bowl, whisk the soy sauce, sugar, sesame oil, and peanut sauce to combine. Set aside.

2 . Heat a 10-inch skillet over medium heat. Add the turkey and cook for about 10 minutes, until crumbled and browned.

3 . Stir in the ginger and garlic and cook for 1 minute more.

4 . Stir in the soy sauce mixture, water chestnuts, red bell pepper, and carrot. Cook for 3 minutes.

5 . Remove the skillet from the heat and stir in the cooked rice.

6 . Spoon heaping tablespoons of the filling onto the lettuce leaves and enjoy.

Cooking tip: The vegetables in this wrap are intentionally crunchy; if you prefer softer vegetables, add them when you begin cooking the turkey.
