Making Creamy Cheesecake

Peel the parchment off the sponge cake.

Cut out a circle to fit the base of the pan.

Set the cake circle in the pan.

Wrap the pan in a double layer of heavy-duty foil.

Alternatively, set it inside a silicone pan.

Scrape the batter into the cake-lined pan.

Set in a water bath and add cream of tartar to the water.

Heat the sides of the pan to unmold the baked cheesecake.

Remove the pan’s sides.

Press crumbs onto the sides of the cheesecake.
