Quinoa with Spinach

This spinach dish makes an excellent side or main dish. It is also nutrient rich, and, of course, delicious!

Ingredients

1 tablespoon olive oil

2 cloves fresh garlic, minced

1 medium leek, sliced thin

1/3 cup golden raisins

2 cups baby spinach leaves

2 cups reduced-sodium chicken or vegetable broth

2 cups butternut squash, peeled and diced

1 cup dry quinoa

2 tablespoons walnuts, chopped

Directions

Note: Rinse the quinoa seeds with water until water runs clear, prior to cooking.
