CHAPTER 3

Evening

Blood Orange Margarita

This blood-red version of the classic frozen margarita features agave syrup (obtained from the same species of agave plant used to make tequila) and manifests an orange-flavored double threat with the blood orange juice and Grand Marnier. Look for blood oranges from late fall to early spring. You can also purchase blood orange juice online year-round.

{ SERVES 4 }

3 cups crushed ice (see Tip)

12 ounces blood orange juice, preferably fresh

Juice of 1 lime

6 ounces 100% agave tequila

2 ounces Grand Marnier or other orange-flavored liqueur

2 ounces agave syrup

Blood orange slices for garnish

Chill four margarita or old-fashioned glasses in the freezer for at least 10 minutes.

In a blender, combine the ice, orange juice, lime juice, tequila, Grand Marnier, and agave syrup and blend on high speed until smooth and slushy. Serve in the chilled glasses with a blood orange slice on each rim as garnish.

TIP: If you don’t have crushed ice, don’t fret; you can still have frozen margaritas. Simply put some ice in a heavy canvas sack or wrap it in a clean kitchen towel and pound it with a rolling pin, a hammer, or the bottom of a heavy skillet. In a pinch you can use whole ice cubes, but the consistency of the finished drink might not be as smooth. Another alternative is to serve the margaritas up. Put the orange juice, lime juice, tequila, Grand Marnier, and agave syrup in a blender and blend until thoroughly combined, then pour into four glasses filled with ice cubes.
