Directions:

Rinse the pork and pat dry. Season with salt and pepper.

In a pressure cooker, heat the olive oil and brown the pork on all sides. Remove the pork and set aside, then sauté the onions for 3-5 minutes. Return the pork to the pressure cooker and add the wine, stock, root vegetables, curry, thyme, parsley, and lemon juice and season to taste with salt and pepper. Stir the ingredients together.

Cover and lock the cooker's lid into place and bring to high pressure. When pressure is reached, lower the heat and cook for 10-15 minutes. Adjust as necessary to maintain even cooking pressure. Allow the pressure to drop naturally and carefully remove the lid.

Remove the lid and add the apples. Simmer for 5 minutes until apples become tender.

To serve, remove the pork and vegetables from the cooker and arrange in bowls. Drizzle juices over the top and garnish with thyme.
