Meatless Shepherd’s Pie

It is completely possible to enjoy a filling treat without using any meat. Here is one such recipe that shows us how to make a meatless shepherd’s pie.

Serving size: 4

Overall time: 28 mins.

Ingredients: • ½ cup diced Celery

• 1 cup diced Onion

• 2 cups steamed and mashed Cauliflower

• 1 tbsp Olive Oil

• 2 cups diced Avocado

• 1 ¾ cup Veggie Broth

• 1 cup diced Tomatoes

Directions:

1. Heat the olive oil in your Pressure Cooker. Add onions, and celery and cook for 3 minutes.

2. Stir in and veggie broth. Cover and allow to cook on the BEANS/LENTILS setting for 10 minutes. Stir in tomatoes.

3. Transfer the mixture to 4 ramekins. Top each ramekin evenly with avocado and mashed cauliflower.

4. Pour ½ cup of water inside the Pressure Cooker and place the trivet. 5. Cover and allow to cook on the BEANS/LENTILS setting for 5 minutes. Serve and enjoy!
