RUBY MURRAY MINIS

This is not a joke, repeat, this is not a joke! Some may say this is crazy, some may say it shouldn’t work, but they would all be very wrong! We are both very partial to a Ruby Murray (curry) and a few beers on a Friday, who isn’t?! So we set ourselves a challenge to turn our Friday night curry into one of our cheesecake recipes. It’s a powerful statement and memorable, to say the least. But it really does work, so give it a go!

You’ll need: 2x10cm (4 inch) ring cutters

Base

1 red onion, sliced

1 tbsp curry powder

1 tbsp cumin seeds

1 tbsp ground coriander

1 egg

100g (¾ cup) plain (all-purpose) flour

Filling

10ml (2 tsp) olive oil

110g (3¾oz) paneer cheese, sliced

120g (scant 1 cup) canned chickpeas (garbanzo beans), drained and rinsed

1 tbsp curry powder

1 tbsp chilli flakes (crushed chili pepper)

1 tsp ground allspice

1 tsp cumin seeds

140g (⅔ cup) cream cheese

50g (1¾oz) spinach

salt and pepper

Topping

2 tbsp Greek yogurt

2 tbsp mango chutney

mini poppadums

small handful of fresh mint leaves
