3. Meanwhile, in a small skillet over medium-high heat, brown the bacon pieces. Remove and drain on paper towels. Remove all but 2 tablespoons of the drippings, then add the onion and celery and cook, stirring, until softened, about 5 minutes.

4. Add the onion and celery, bacon, stewed tomatoes, brown sugar, vinegar, salt, and oregano to the beans in the slow cooker; stir to mix well. The liquid should cover the beans by ½ inch, otherwise, add some boiling water. Cover and cook on HIGH to bring to a boil, then reduce the heat to LOW and cook until the beans are soft, thick, and bubbling, 10 to 14 hours. Serve hot.
