Horsetail is a perennial herb. The edible part is the young spikelike inflorescence of the plant, which is cooked or pickled. Arabs, Andalusians, rural French, and some Italians cook horsetail.

PLANT CHARACTERISTICS AND VARIETIES

Hyacinth grows among rocks and in fields and has very fragrant, deep blue flowers. Hyacinthus orientalis and H. romanus are popular hyacinths whose bulbs are pickled in southern Italy, but it is the grape hyacinth that is cooked ([>]).
