2 IN A SMALL BOWL, CREAM TOGETHER THE BUTTER, GARLIC, PARSLEY, LEMON ZEST, SALT, PEPPER, AND LEMON JUICE.

3 GENEROUSLY SPREAD THE BUTTER MIXTURE ONTO THE BREAD SLICES.

4 DIP THE BUTTERED SIDE OF EACH BREAD SLICE LIGHTLY IN THE PARMESAN AND PLACE IT ON THE BAKING SHEET.

5 BAKE FOR 8 MINUTES, OR UNTIL LIGHTLY GOLDEN BROWN.

JUST AN IDEA: Add ½ teaspoon Tabasco sauce or ½ teaspoon poppy seeds to the butter mixture to add a zing.

This recipe appeared in Sarah Leah Chase’s Nantucket Open-House Cookbook. It’s one of only two recipes my father wrote down, because he cooked by the seat of his pants!
