This salad usually contains bread, but it is just as delightful without – the vegetables as an ensemble are crisp and clean, and you can add diced feta and olives to pan it out too. This makes a large bowlful, which I find is not overdoing it for three or four, even though at a glance it easily serves six.

Serves 4

1 cucumber, peeled, halved lengthways and thickly sliced

200g radishes, trimmed and quartered

300g baby plum or cherry tomatoes, halved

1 small red onion, peeled, halved and thinly sliced

a large handful each of mint leaves and flat-leaf parsley

3 tablespoons extra virgin olive oil

2 tablespoons lemon juice

sea salt

Place the cucumber, radishes and tomatoes in a large bowl with the onion, separating out the strands. Tear the mint leaves in half and coarsely chop the parsley, and toss with the salad vegetables. You can prepare the salad to this point in advance, in which case cover the vegetables with clingfilm and set aside somewhere cool.

Just before eating, pour the oil and lemon juice over the vegetables, season with salt and toss.
