Cute Baby Kale and Avocado Salad
Baby kale is more tender than regular old kale, and perfect for salads. To make the dressing the best it can be, use two or three different herbsâit makes the whole salad lighter and more flavorful. The avocado and the silky dressing add a lush creaminess to this hearty bowl.
SERVES 2 TO 4
buttermilk ranch dressing
½ cup buttermilk (or plain yogurt)
½ cup mayonnaise
1 fat garlic clove
3 tablespoons chopped fresh chives or scallion greens
3 tablespoons mixed soft fresh herb leaves, such as dill, mint, parsley, basil, and/or cilantro, in any combination
Salt and freshly ground black pepper
Squeeze of fresh lemon juice (optional)

1 avocado
Squeeze of fresh lemon juice
Salt as needed
