24 slices (about 8 ½ ounces [240 g]) raw beef, sliced paper thin
1 to 2 tablespoons (5 g) aromatic herbs, such as parsley, thyme, rosemary, and marjoram
2 cloves garlic, chopped, divided
¾ ounce (20 g) grated Pecorino cheese
Sea salt, to taste
Black pepper, to taste
1 egg, beaten
1 cup (100 g) dried bread crumbs
¼ cup (40 g) pine nuts, chopped
6 ½ tablespoons (100 ml) extra-virgin olive oil, divided
2 cups (100 g) baby salad greens
A few drops balsamic vinegar
Sprinkle the beef with the herbs, half of the garlic, and the Pecorino. Season with salt and pepper.
Place the egg in a shallow dish.
Mix the bread crumbs and pine nuts in a second shallow dish.
Bread the beef by dredging it in the egg and then in the bread crumbs mixture. Roll up and secure the beef rolls with small wooden toothpicks.
In a saucepan, heat half of the oil and sauté the remaining half of the garlic. Sear the beef rolls over high heat, for about 3 minutes. Season with salt and pepper.
Serve with salad greens dressed with the remaining oil and vinegar.
