VEGETABLE SIDES

This is the most important section of the book for weight loss. You can eat tonnes of all this stuff. The more you eat, the fuller you will get and the less need you will have for a doughnut or that glass of wine.

DRESSINGS

Of all the things I learned from Georgie, the most rewarding is that drizzling a delicious dressing on to the simplest plate of vegetables can elevate it into something wonderful. Here are six of my favourite dressings: try them and find your favourites to make again and again. They all keep well in the fridge for a week. Try stirring them through soups, salads and vegetable dishes, or sprinkle over meat and fish.

All of these are suitable for 2 servings of salad.

For all the dressings (except the Avocado), simply whisk the ingredients together with a fork, or shake together in a jam jar (with the lid on).

SIMPLE LEMON DRESSING

6 tbsp olive oil

juice of 1 lemon

good pinch of salt

DIJON DRESSING

6 tbsp olive oil

1 tbsp cider vinegar

½ garlic clove, finely chopped

pinch of salt

1 tsp Dijon mustard

1 tsp honey

GREEN DRESSING

6 tbsp olive oil

1 tbsp cider vinegar

juice of ½ lemon

1 heaped tbsp chopped herb leaves (I like flat-leaf parsley, coriander or dill, or a combination)

pinch of salt

½ garlic clove, finely chopped

MISO & SESAME DRESSING

This also makes a wonderful sauce in which to stir-fry meat or vegetables.

1 heaped tsp miso paste

2 tbsp sesame oil

2 tbsp olive oil

juice of 1 lemon

TAHINI DRESSING

2 tsp tahini

juice of ½ lemon

6 tbsp olive oil

2 tbsp water

pinch of salt

1 tsp honey

AVOCADO DRESSING

¼ avocado, peeled and stoned

7 tbsp olive oil

pinch of salt

¼ garlic clove

juice of 1 lemon

Put all the ingredients into a food processor or blender and process until smooth.
