FOR COUSCOUS, in a small saucepan, bring broth and turmeric to a boil. Reduce heat to low, stir in couscous. Cover and simmer for 10–12 minutes or until liquid is absorbed. Transfer cooked couscous to a small bowl, stir in half of the oil, cover, and let cool completely.

FOR BUCKWHEAT, in another small saucepan, bring water, salt, and dried oregano to a boil. Reduce heat to low, then add buckwheat. Cover and simmer for ten minutes or until liquid is absorbed. Transfer cooked buckwheat to a small bowl, stir in remaining oil, cover, and set aside to cool completely.

TO MAKE SALAD, in a large bowl, combine cooled couscous, buckwheat, and remaining ingredients. Toss gently to combine. Serve.
