Methods:

1. Peel the carrot, parsnip, celery root and shallot and bring them to a boil.

2. Peel the outer layers only, off the garlic heads.

3. Using a sharp knife, snip the upper part (from the garlic head’s top) so the garlic under the remaining layers becomes visible.

4. Wrap the garlic heads in aluminium foil and bake at 400°F for about 35-45 minutes.

5. When they’re done and cooled off, squeeze the garlic out of the skin.

6. Mash the baked cloves with olive oil and salt and add them to the soup (vegetables should be tender by now).

7. Add fresh parsley and serve.
