Apple Cherry Fried Rice

Ingredients

1 apple (peeled, cored and chopped into small pieces)

1 1/2 cup of brown rice (or wild rice - cooked)

1 cup of mushrooms (chopped)

1/4 cup of cherries (sun dried)

2 tablespoons of olive oil

2 tablespoons of onions (finely minced)

1 tablespoon of curry powder

salt and pepper to taste

Preparation:

Cook the rice ahead of time, rice needs to be cool and dry.

Heat the oil in a wok or large skillet at medium high heat.

Saute the onions and curry power until tender.

Mix in the apple, mushrooms and cherries, heating until the mushrooms are well cooked.

Stir in the rice and "fry" until heated through.

Season with salt and pepper.

Serves about 4.
