Spread the hummus evenly over two of the wraps.

Sprinkle the chopped tomatoes and parsley over the hummus, then drizzle with olive oil and season to taste.

Cover with the other two wraps, press down lightly and cut into quarters, to form wedges.

Makes 4 children’s portions

Vanilla custard

30 ml (2 Tbsp) Moir’s Custard Powder

30 ml (2 Tbsp) brown sugar

180 ml (3⁄4 cup) Alpro Soya Milk

5 ml (1 tsp) vanilla essence

In a small saucepan, combine the custard powder, sugar and 60 ml (1⁄4 cup) soya milk.

Whisk together over a medium heat, stirring continually until the mixture starts to thicken.

Add the vanilla essence and then add rest of the milk gradually, stirring between each addition.

When the mixture stops thickening, remove from the heat.

Serve with Chunky apple sauce (see page 164) for a sweet ending to any meal.
