vegetable stock

2 cups

dried TVP slices

¼ cup

olive oil

curry powder

spelt flour

apples, peeled, cored, and chopped

10 cups

chopped mixed vegetables (e.g., squash, sweet potato, cauliflower, mushrooms, zucchini, carrot, peppers)

raisins

1 tsp

sea salt

1. Bring stock to a boil in a medium saucepan. Turn off heat and add TVP. Stir, then let sit while TVP rehydrates.

2. Heat oil in a large pot over medium-high heat.

3. Add onions and garlic and cook until softened and starting to brown.

4. Add curry powder and cook, stirring constantly, for 1 minute.

5. Add flour and cook, stirring, for 1 minute.

6. Using a ladle, add stock and TVP gradually, stirring constantly, until all stock is incorporated.

7. Stir in apples, mixed vegetables, raisins, and sea salt, and bring to a boil. Reduce heat and simmer for about 30 minutes or until vegetables are done to your liking.

8. Taste and add more salt if needed.
