Licorice Tosca Rolls

Tasty rolls with a licorice and almond paste filling and a tosca glaze on top. Impossible to mistake these for anything but the best!

MAKES: 30 ROLLS

Rolls

1¾ oz. yeast

¾ cup milk

6 oz. butter, room temperature

1 egg

3 tbsp. simple syrup or cane sugar

½ tsp. salt

3½–4 cups flour

Licorice and Almond Paste Filling

2 ⅔ oz. almond paste

3½ oz. butter, room temperature

1 tbsp. cane sugar

1 tbsp. brown sugar

½ tbsp. licorice granules or 1 tbsp. licorice powder

Tosca Glaze

1¾ oz. butter

⅖ cup cane sugar

1 tbsp. milk

1 tbsp. flour

1 tsp. licorice granules or 2 tsp. licorice powder

1¾ oz. almond flakes

Crumble the yeast into a dough mixer or bowl. Heat the milk to 98° F, then stir in the butter, egg, syrup, and salt. Add the flour a little at a time until the dough is smooth. Work the dough for 5 minutes in the machine or 10 minutes by hand. Cover the bowl with a kitchen towel and let the dough rise for 40 minutes.

Finely grate the almond paste for the filling and combine it with the butter, cane sugar, brown sugar, and licorice granules.

Place the dough on a floured work surface and divide it into two pieces. Roll one piece into a rectangle, about 18 x 12 inches, then spread half of the filling over the dough and roll it up. Slice the dough into 1-inch-thick pieces and put the pieces into paper liners on a baking sheet. Repeat the procedure with the other piece of dough. Cover the dough with a kitchen towel and let it rise for 30–40 minutes. While the dough is rising, preheat the oven to 480° F.

Combine all of the ingredients for the glaze in a saucepan over low-medium heat and stir gently until the butter has melted. Cover the rolls with the glaze and bake them in the middle of the oven for 8–10 minutes. Let them cool on a rack.
