Cucumber, Radish, and Avocado Chopped Salad

Subtle changes in how a vegetable is cut can make a dramatic difference in flavor and experience. The chunky texture of this salad holds up longer than other, more delicate options.

2 cups diced cucumber (approximately 1/2-inch dice)

1 cup diced radish

2 diced avocados

1/4 cup mint leaves, minced, or microgreens

2 tablespoons lemon juice

1 tablespoon apple cider vinegar

2 tablespoons olive oil

Salt and pepper to taste

Toss all ingredients—the avocado should still be chunky, but provide a slight creaminess to the salad. Allow to marinate for approximately 10 minutes in the refrigerator before serving. Salt and pepper to taste.

Serves 4 to 6
