1 butternut pumpkin (squash), peeled and chopped into 2.5 cm (1 inch) pieces

1 small sweet potato, peeled and chopped into 2.5 cm (1 inch) pieces

2 turnips, peeled and chopped into 2.5 cm (1 inch) pieces

3 carrots, peeled and chopped into 2.5 cm (1 inch) pieces

3 zucchini (courgettes), chopped into 2.5 cm (1 inch) pieces

1 brown onion, quartered

1 garlic bulb, cloves separated and peeled

large pinch of Celtic sea salt

freshly ground black pepper, to taste

60 ml (2 fl oz/¼ cup) extra virgin olive oil

chopped herbs, such as rosemary or thyme, to serve
