[5] When the mussels are fully cooked, usually within 5 minutes, the meat pulls away from one shell. If you find a mussel or two that didn’t open, carefully remove them—they often are full of mud—and throw them out.

[6] Clams can be steamed with the same liquids as mussels. I typically use a mixture of white wine, parsley, and chopped tomatoes. [7] Clams pop open all at once, usually within 10 minutes, so you don’t have to worry about their meat clinging to both shells. Clams will sometimes refuse to open even when perfectly good. If you have clams that won’t open, stick a knife in the slit between the two shells and give it a twist. The shells should pop open. If the shells separate with no resistance, it means the clam is dead and you should just throw it out.
