In a food processor, pulse toasted walnuts until well chopped.

Add lemon zest and juice, nutritional yeast, and salt and continue to process until a paste is achieved.

For the Roasted Beets

Preheat the oven to 425 degrees.

Wash and scrub beets well and cut off tops and bottoms.

Toss the beets with the olive oil and salt.

Place yellow beets on one sheet tray and red beets on another sheet tray and cover both with foil. Roast for 40–60 minutes, until tender (cooking time varies depending on beet color).

Cool and slice.
