GERMAN CHOCOLATE CAKE

Ooey gooey, decadent chocolate with coconut and walnuts—holy moly, my mouth is watering just thinking about this cake. If you make this and do it as a four-layered cake smothered with the delicious coconut frosting, I say call me up—I’m coming over for a slice!

MAKES 8 SLICES

DRY

2 ½ c/413 g Cara’s All-Purpose Blend (here)

¾ c/22 g cocoa powder

½ c/73 g lightly packed brown sugar

½ c/100 g granulated sugar

2 tsp/7.5 g baking powder

1 tsp baking soda

1 tsp xanthan gum

½ tsp salt

WET

1 c/240 ml light coconut milk, canned

½ c/120 ml hot water

½ c/120 ml vegetable oil

2 Tbsp/14 g flaxseed meal plus 6 Tbsp/90 ml water–thickened for 5 minutes

1 Tbsp/15 ml apple cider vinegar (or lemon juice)

½ tsp vanilla extract

ADD-ONS

1 batch Coconut Walnut Icing (here)

Chopped walnuts (optional)
