In a food processor, combine the rice, walnuts, parsley, thyme, salt, black pepper, and cayenne. Process to a crumbly mixture. Turn off the processor halfway through and scrape down the sides. Taste a little and adjust the seasoning to your liking. When the mixture is ready, remove the blade and get ready to make some balls!
On a large plate, spread out the chickpea flour. Scoop some of the dough, about the size of a golf ball, onto the palm of your hand and roll to make a ball. Then roll in the flour and dust off some of the extra flour that may stick on.
