The Cheesecake Factory's Santa Fe Chicken Salad

Lime dressing adds a nice zest to this chicken dish. Prepare this copycat recipe for your next outdoor dinner party!

Ingredients

• 6 chicken breast

• 3/4 cup teriyaki marinade

• 15 cup romaine and leaf lettuce

• 1 cup cilantro

• 2 cans of black beans

• 2 cans of kernel corn

• 3 cup jack cheese

• 3 cup corn tortilla strips

• 3 cup seeded tomatoes

Lime Dressing:

• 1/2 tsp. lime zest

• 2 tbsp. lime juice

• 1 tbsp. snipped cilantro

• 1/4 tsp. salt

• 1 clove garlic

• 1/2 cup olive oil

Instructions

• Marinate chicken in teriyaki marinade for 1-2 hours.

• Approximately quarter-hour broil and baste chicken; cool, then dig pieces of bite-size or shred.

• Cook all ingredients of lime dressing until it thickens.

• Tear greens; add beans and corn, each with cilantro and 1 cup of lime dressing, and serve.
