Broiled/Braised Tenderloin with Fresh Mango Salsa

There’s just something about pork and fruit that goes well together. The juices of both complement each other, and it’s very apparent in this Caribbean-influenced entrée. Mango and lime add citrus to the spices and the tenderloin is cooked to be just as juicy as its marinade. A light and quick dinner for a breezy summer evening!

Prep Time: 10 Minutes

Cook Time: 25 Minutes

Servings: 4

Ingredients

1 mango, chopped

2 scallions, chopped

1 tbsp. plus 1 tsp. oil

1lime, zest and juice

1/2 lemon, zest and juice

1/4tsp. crushed red pepper

Kosher salt

1 1/4 pounds pork tenderloin 1 tenderloin)

1tsp. ground coriander

Directions

☐ Heat broiler.

☐ Mix together 1 tbsp. of the oil, mango, scallions, lime zest and juice, lemon zest and juice, crushed red pepper, and a pinch of salt then put this mixture to the side and save for later.

☐ Over the meat pour a tsp. of oil and spread around the meat. After that you will season with coriander and a couple pinches of tsp. of salt.

☐ Place the pork in the broiler for 6-7 minutes on each side. Make sure you check the meat to see if it is browning before you turn it over to its other. Repeat the process.

☐ Give the meat about 5 minutes to cool before slicing, and serve with the salsa mixture.

☐ Delicious recipe that is simple and a ton of flavor.
