PAPRIKA BROWN SUGAR CHICKEN

This sweet chicken is a breeze to make and so yummy to eat. Eat it alongside mashed potatoes, Sweet Potato Chips (page 183) or in a salad (Sweet Garden Salad, page 75).—Chelsea

Makes 2–3 servings | Time: 40 minutes (I recommend marinating the night before)

2 large boneless, skinless chicken breasts

¼ cup brown sugar

1½ Tbsp. paprika

½ Tbsp. chili powder

1 tsp. oregano

1 tsp. garlic powder

1 Tbsp. oil

pepper for extra taste

1. Combine brown sugar, paprika, chili powder, oregano, and garlic powder into a large plastic bag.

2. Slice chicken into strips and drop them into the plastic bag. Squish bag to mix chicken with seasonings. Place bag in fridge for 30 minutes to marinate (though more time will just make it more yummy!).

3. Add oil to a pan and cook chicken on high heat for 10 minutes or until cooked. Sprinkle with pepper for extra flavoring.

Variation: You can also use the same marinade for 1 lb. fish.
