2 garlic cloves (minced)

1 tsp salt

1 pinch pepper

1 tsp parsley (minced)

1 tsp oregano (minced)

1 bay leaf

1 tsp coconut oil

1/8 tsp nutmeg

1 cup of yellow onion (in strips)

1 cup squash (in strips)

1 cup zucchini (in strips)

½ cup green peas

½ cup coconut milk

½ cup coconut flakes

½ orange (optional)

Preheat the oven at 390°F (200°C).

Mix the garlic, parsley, oregano, salt and nutmeg.

Put the coconut oil either in a terrine or an oven proof dish.

Place the vegetables in the dish in alternate layers, sprinkling each layer with the spice mix from before.

Pour the coconut milk on top and sprinkle everything with the coconut flakes.

Optionally, top with orange slices.

Cover the dish and bake until vegetables are tender. This should take about 15 minutes.
