Sweet-and-Sour Sesame Tofu

Serves 4–6

We love tofu around here, and we make this recipe all the time — it’s one of our favorites. Cider syrup is the perfect sweetener for this dish, taking the place of the vinegar and sugar in more traditional versions. Serve with rice and steamed kale or stir-fried greens.

Ingredients

2 tablespoons sunflower oil

2 pounds extra-firm tofu

4 tablespoons cider syrup

3 tablespoons soy sauce

1 tablespoon chopped dried hot Asian pepper or red pepper flakes

1⁄4 teaspoon freshly ground black pepper

2 tablespoons toasted black sesame seeds

3 tablespoons chopped fresh chives or scallions, for garnish
