MAKES ABOUT 3 CUPS

1 tablespoon olive oil

1 large onion, coarsely chopped

3 garlic cloves

1 (16-ounce) package extra-firm tofu, drained

2 tablespoons lemon juice

2 teaspoons sea salt

1 teaspoon freshly ground black pepper

2 cups chopped fresh basil

In a large skillet, heat the olive oil over medium heat. When it shimmers, add the onion and cook, stirring occasionally, for 5 to 7 minutes, until softened. Transfer the onion to a food processor. Add the garlic, tofu, lemon juice, salt, and pepper. Process until smooth. Taste and adjust the seasoning. Pulse in the basil until well incorporated. Store in an airtight container in the refrigerator for up to 2 days.
