Upon Sam’s passing in 1963, the responsibility of running the store was inherited by the next generation. Since my grandfather was the oldest, the preservation of the business fell primarily on his shoulders. That said, it was a family business, and David, Mary, and Sophie each played a vital role in expanding and maintaining the livelihood that preserved each family.

As my uncle Jim recalls, my grandfather would sharpen his knives in the early mornings with a long steel, looking as though he was a surgeon ready to attend to a procedure. Weekly, my grandfather accepted deliveries of beef sides delivered to the back door by an Armour-brand meat truck. The delivery man, dressed in a white coat with a cap and sash, would drop them at the door for weighing, and Abe and David would sign off on the order before hanging them in the aging coolers. While Abe would go to work breaking down the custom cuts, David would go about his duties, including spicing the house-made sausage sold by the pound and, on occasion, preparing link sausages on request. On Saturdays a soundtrack of Paul Harvey could be heard in the background on the radio, with David and Abe eating lunch—cooked hot dogs with my aunt Mary’s famous tomato, onion, and mustard relish—habitually at high noon. There were always enough dogs left over, wrapped in wax paper, for anyone lucky to drop in.
