2 tablespoons sunflower oil

1/2 red bell pepper, chopped

6 cloves garlic, minced

1 cup chopped celery

1 teaspoon dried basil

2 bay leaves

1 cup leftover Tesla's Rice

3 cups leftover Sweet Lentil Polou

Filtered water

1/4 teaspoon Tony Chachere's Original Creole Seasoning

Pinch dried red chilis

Sea salt to taste

Fresh ground black pepper to taste

1 cup Tillamook Vintage White Extra Sharp Cheddar Cheese

1 cup chopped bok choy

1/2 cup chopped leek

Combine oils in a large frying pan and sauté bell pepper, garlic, and celery over medium heat until partially soft. Add basil and bay leaves. Add leftover rice and polou and enough water to make a liquid mush. Bring to boil and cover. Simmer for 20-30 minutes or until all liquid is absorbed. Add seasonings to taste. Allow to rest, covered and with heat off, for 10 minutes. Add cheese and stir. Add leek and bok choy just before serving. Makes 4 large helpings.
