The night before we were due to leave India, I announced to everyone on the farm that I wanted to cook for them all. This was to be my way of saying thank you for everything they had done for my daughter and me during our stay.

I had learned a great deal about cooking traditional Punjabi food from my mother-in-law over the last few years. I was confident that I could rustle up a great meal for around 20 people on this night! It was a big task and one that I wanted to get just right. I truly wanted to impress them. My mother-in-law was on standby should I need help, however, this was something I wanted to do all by myself. I had help chopping the onions and fresh coriander, but that’s all really.

I decided to cook the family Chilly Paneer with chapattis. It took me ages to cook a big enough pot for 20 people. However, I managed it. When it was time to serve the food, everyone gathered in the courtyard and sat down. I watched as they eagerly received their plate of food from me and began to eat. I knew I was cooking traditional Punjabi food for a traditional Punjabi family! I waited with great anticipation for their feedback and just hoped they did not choke on my cooking…

Thankfully, everyone enjoyed it and was impressed with my Chilli Paneer dish, which is a personal favourite of mine. My mother-in-law was so proud of me and advised me later that night that I had made her family very happy. They had not been expecting me to cook for them.

The last day had arrived and we were leaving the farm and preparing for our three-hour journey to Amritsar. This was the most unforgettable place for me because this was home to, ‘The Golden Temple.’ This was the last place we visited as it was on our way to the airport in Amritsar. This was to be a once in a lifetime experience. One I will never forget! I made sure I had a headscarf in my handbag; otherwise, I would not be allowed inside the Golden Temple without one.
