Chicken Wings With Tomato Concassé

Ingredients

Steps to Cook

2 lbs. chicken wings

1 ½ lbs. tomatoes

4 garlic

1 onion

4 potatoes of the violet type

Sugar to taste

Honey to taste

2 sprigs chives

Salt to taste

black pepper taste

Clean the wings of possible remains of feathers and ossicles. Wash and dry them with kitchen paper. Line the plate with parchment paper, place them on top and brush them with honey. Put them in the air fryer preheated to 360°F and roast them for 35 minutes.

Blanch the tomatoes in salted water. Refresh in cold water and drain; peel them and cut them into concassé: dices. Peel, chop and sauté the garlic and onion in oil until tender. Add the tomato and a pinch of sugar, salt and pepper and cook for 2 minutes.

Wash and dry the potatoes. Slice them very thinly with a mandoline and fry them in hot oil until golden and crisp. Drain on kitchen paper and serve with wings and tomatoes sprinkled with washed and chopped chives.
