FRIED GREEN TOMATOES

1 medium green tomato per person

Flour

Salt and pepper

Cooking oil

Wash, core and slice tomatoes in ⅓-inch slices. Do not peel. Dip each slice in flour, season to taste with salt and pepper and fry until golden in hot oil. Drain on paper toweling, then serve hot with butter or margarine.

BROILED GREEN TOMATOES

Select one large green tomatoes for each two servings. Wash and core tomatoes and cut in halves. For each half, dice ½ slice bacon. Arrange uncooked bacon bits on tomato halves and sprinkle with Parmesan cheese. Broil 10 minutes, or until bacon is crisp and tomato top is lightly browned.
