These gluten-free fritters use both spelt and rice flours. If these are unavailable, use whole wheat, all-purpose, or even buckwheat flour — or a combination of flours.

for the tzatziki

1 1/2 cups soy yogurt

1 tbsp. olive oil

1/2 cucumber, shredded

1 clove garlic, crushed or minced

1 tsp. chopped fresh dill or 1/2 tsp. dried dill

sea salt and black pepper

for the fritters

1/2 cup rice flour

1/2 cup spelt flour

1 tsp. baking powder

1/3 cup quick-cooking oats

2 tbsp. nutritional yeast

2 tbsp. chopped fresh mint or 1 tsp. dried mint

1 tsp. ground coriander

2 medium zucchini, coarsely shredded

3 scallions, finely chopped

1 red chile pepper, finely chopped

sea salt and black pepper

1/2 cup soy yogurt

canola oil, to fry
