½ cup (125g) whole-egg mayonnaise

1 clove garlic (3g), crushed

½ tsp. (2½ml) lemon juice

In a small bowl, mix the ingredients together. Season to taste. Refrigerate until ready to serve.

VEGANS: Simply substituting whole-egg mayonnaise for soy mayonnaise or Vegenaise.

Balsamic Glaze

2 cups (500g) balsamic vinegar

½ cup (75g) brown sugar

Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a gentle boil, then reduce heat and simmer for 20-25 minutes, or until the glaze reduces to a syrupy-like liquid (it should coat the back of a spoon).

Cool before pouring into a jar with a lid; store in refrigerator.
