Granted, not every parent is desperate for their kid to fall in love with leeks – but this recipe works on a couple of levels: firstly, it introduces your kids to the taste of onion (leeks are from the same family) and therefore ‘stronger’ flavours. Secondly, it continues to market ‘green’ foods by putting this particular green food in a child-friendly recipe idea, such as muffins. These taste best when sliced in half, still slightly warm, spread with butter. I tend to use these a lot in my kids' lunchboxes.
