Great Lavender Ice Cream

Preparation time: 2 hours and 10 minutes

Cooking time: 15 minutes

Servings: 4

Ingredients:

2 cup whipping cream

2 cups milk

¼ cup earl grey lavender tea leaves

4 egg yolks

1/3 cup sugar

Directions:

Pour the cream and the milk into a pan, heat up over medium-high heat for a couple of minutes and take off the heat.

Put the tea leaves into a tea ball, place it in the milk and cream mix, and leave aside for 5 minutes.

Remove the tea ball and cool the mixture down.

In a bowl, mix egg yolks with the sugar and whisk well.

Add the lavender mixture gradually and whisk well.

Strain this into a pan, heat up over medium heat and simmer until it thickens.

Cool the mixture down, transfer it to your ice cream machine and process according to the instructions.
