Creamed Spinach & Mushroom Lasagna
Mascarpone is a super-rich double- or triple-cream cheese that has a very mild flavor. You can substitute Neufchâtel or cream cheese. The spinach mixture might release liquid, and thatâs okay since the oven-ready noodles need moisture to expand and cook. If you use traditional boiled lasagna noodles, you can sprinkle about a quarter cup of breadcrumbs in the bottom of the dish to absorb any excess liquid.
SERVES 4
CREAMED SPINACH
2 tablespoons extra-virgin olive oil
1 shallot, minced
1 (8- to 10-ounce) container sliced mushrooms
½ cup white wine
½ teaspoon fine sea salt
½ teaspoon freshly ground black pepper
1 (16-ounce) container or 2 (10-ounce) containers fresh baby spinach
1 (8-ounce) container mascarpone cheese
½ cup (2 ounces) shredded Parmesan cheese
