I usually use small red bliss potatoes for this type of dish, and I leave them unpeeled. However, any boiling potato can be used. They can be cut into 1½-inch pieces or left whole; if whole, they can be peeled or tuxedoed (a thin strip of peel removed from around the center of the potato, rather like a belt or cummerbund). These can also be prepared in the microwave: Pierce potatoes if using whole, and place in a microwave-safe bowl. Microwave, lightly covered, on high for 6 minutes; add butter or margarine, parsley, and salt (if desired), then toss. Recover and cook 2 to 4 minutes longer or until potatoes are tender. Let stand 2 minutes.
