Roots and Tubers

Some of the best foods of plants are to be found as underground swellings packed with nutrition. During the growing season tubers store up nutritional material for the next spring’s growth, so harvest them from late fall to early spring. Dig with meticulous care and patience, using the shovel-end of a digging stick. Use the blunt end of the stick for applying pressure from body weight leaning into the stick. To be certain that the root you eat was once connected to the plant you identified above ground, do not break the plant from its root until after harvesting.

Plants with edible underground parts: air potato, bugleweed, bulrush, burdock, cattail, chufa, curly dock, day lily, duck potato, evening primrose, wild garlic, wild ginger, groundnut, hog peanut, honewort, Indian cucumber root, Jerusalem artichoke, kudzu, meadow beauty, wild onion, Queen Anne’s lace, Solomon’s seal, sorrel, spring beauty, thistle, toothwort, trout lily.
