To grill
1. First braise the octopus for 2 hours (see entry 272).
2. Toss the sections of octopus with olive oil and herbs such as thyme or marjoram.
3. Place the octopus on a grill and cook just long enough to heat the octopus through.
4. Save the leftover braising liquid from the octopus stew so that if you have leftover grilled octopus, you can dice the pieces, melt the braising liquid (which will have gelled), and layer them together in a terrine (see entry 331). Serve the terrine in thin slices as a first course.
