22. Moroccan Red Gazpacho

This is a Moroccan soup that spicy and tangy and can make a great combination when served with pita bread.

· 4 large ripe plum tomatoes, coarsely chopped

· One (6 1/2-inch) pita, torn into pieces

· One large red bell pepper, seeded and coarsely chopped

· 1/4 tsp. ground cinnamon

· 1 large cucumber, peeled, seeded, and coarsely chopped

· 1/4 small yellow onion, chopped

· 2 tsp. ras el hanout(spice blend from Morocco)

· 2 cups unsalted tomato puree

· 4 tbsps. extra-virgin olive oil, divided

· 2 tbsps. sherry vinegar

· 1/2 cup boiling water

· 1 cup cold water

· 1/2 tsp. ground cumin

· 2 tbsps. chopped fresh cilantro

· 3/4 tsp. salt

Method

1. Take a bowl and add the pita bread. Pour the boiling water to cover it.

2. Let it stay for 1 minute. Drain and keep it aside. Blend the pita, 1 tbsp. oil, tomatoes, vinegar, bell pepper, onion and cucumber in a blender to get a smooth mix.

3. Place this mix in a bowl and stir in the tomato puree, the spice powder, cumin and cinnamon.

4. Cover and refrigerate for 2 hours. Ladle the soup into 8 bowls, top it with 1 tsp. oil and ¾ tsp. cilantro and serve.
