Directions:

In the instant pot mix up together diced onion and mushrooms. Add olive oil and saute vegetables for 3-4 minutes or until golden brown.

Then transfer vegetables in the bowl.

Add water and coconut cream in the instant pot.

Then add potato and corn kernels. Sprinkle the mixture with salt, paprika, and chili flakes.

Set Manual mode (High pressure), close and seal the lid.

Cook chowder for 5 minutes. Then allow natural pressure release for 5 minutes.

Ladle the cooked chowder in the bowls and sprinkle with cooked onion and mushrooms.
